Desiccated coconut is the shredded and dried white meat of mature coconuts (cocos nucifera). Fresh coconuts are de-husked and de-shelled, washed and then grounded into a fine mass. This mass is then blanched with steam and dried until desiccated coconut is obtained.

Desiccated coconut is mainly used as an ingredient for the confectionery and bakery industry: fillings for chocolate and candy bars, toppings for cakes and pastries, or biscuits and cookies.

NV Coconut is a high fibre food and so is desiccated coconut. Coconuts also have a good level of mineral salts like potassium, sodium, phosphorus and chlorine.

Desiccated coconut is available in various sizes being extra fine, fine, medium and coarse. Flakes are available in wide (chips) or smalls slices, sweetened and unsweetened as well as raw or roasted.
